Ingredients

For the Chicken:

  • 1 ¾ lbs boneless, skinless chicken breasts
  • 1 teaspoon blackening seasoning, divided
  • ½ teaspoon roasted garlic seasoning
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • Juice of 2 limes (about ¼ cup)

For the Corn and Zucchini Salad:

  • 1 (12.7 oz) bag frozen Southwest-style vegetables (beans, corn, lentils, macaroni, and sauce)
  • 1 large zucchini, coarsely chopped
  • Juice of 1 lime (about 1 tablespoon)
  • 1 tablespoon olive oil
  • 1 tablespoon honey
  • ½ teaspoon blackening seasoning
  • ¼ cup pre-sliced green onions

Instructions

Step 1: Prepare the Chicken

  1. Preheat a large sauté pan over medium heat for 2–3 minutes.
  2. Season the chicken with blackening and roasted garlic seasonings. It would be nice if the chicken is marinated with lime for 30+ minutes.
  3. Add butter and olive oil to the pan, then place the chicken in. Cook for about 8–10 minutes on each side, turning occasionally, until the internal temperature reaches 165°F and the chicken is well browned.
  4. While the chicken cooks, squeeze limes to prepare the juice.
  5. Once cooked, remove the chicken from the pan. Whisk lime juice into the pan juices to create a sauce. Slice the chicken and pour the sauce over it before serving.

Step 2: Make the Corn and Zucchini Salad

  1. Microwave the frozen Southwest-style vegetable blend on HIGH for 1–2 minutes to thaw.
  2. Cut zucchini lengthwise into quarters and then slice thinly (about 2 cups).
